I’ve been eating really bad over the last couple of months. I used to eat alot on the go. Well, I still do, I’m just buying alot more healthier. I had to extend my healthy eating habits to the home front too. We are a busy family of four and theres little to no time for sick kids, hubby or mommy. I firmly believe that our food choices play a huge role in our health state. This is one of the main reasons I came up with this quick 5 ingredient Green Power Salad.
Its quick, requires minimum ingredients that won’t break the bank and its a great way to add a health boost to your weekly meals. I shared it over my Instagram and Facebook accounts a couple weeks ago, but thought I would share it here for those of you who don’t follow me on social media.
Quick 5 Ingredient Green Power Salad
- Roasted Sweet Potato
- Finely Chopped Kale
- Chopped Coriander
- Steamed Baby Corns
- Butter Lettuce
- Peel and chop sweet potato into cubes. Bake in the oven for 15-20 minutes with a dash of olive oil, salt and pepper. Add a pinch of sugar too if you wish. You can substitute the olive oil for whatever oil you have in your pantry.
- Steam the baby corns.
- Rinse and chop up kale and coriander.
- Once the sweet potato and baby corns are cooked and cooled down, add to a bowl of washed lettuce. Throw in the kale and coriander. Add any spices and fresh lemon juice or any salad dressing of your choice.
I served ours with sticky chicken pieces and steamed mixed vegetables. What I love about this salad is that you can tweek it and make it your own. Add some pumkin seeds, flax seeds, or any other power ingredients to give it that extra boost! Oh and its Vegan friendly 🙂
