Welcome to my third waterless recipe of the waterless recipes series. Last week I made Waterless Molten Chocolate Microwave Mugs and they were so YUMMY! Today’s recipe though, has got to be my favorite mid-day snack. Simply because I love mushrooms. They compliment so many dishes. I often add golden fried mushrooms to a crisp green salad, and it’s so delicious. On that odd occasion that I meet someone who says “I don’t eat mushrooms”, I don’t really see them often after that, or at all ha! Just kidding, I’m being abit dramatic. But you get my point, I love mushrooms. So today, I’m making Creamy Mushrooms and Thyme on Toast. Easy-Peasy and the perfect mid day meal for yourself and the kids.
Creamy Mushrooms and Thyme on Toast
Ingredients: (serves 2)
2 slices Sasko Plus Soy and Linseed White Bread
250g Portabellini/white button Mushrooms
½ tsp fresh Thyme
3 Tbsp Cream
15g Grated Parmesan
Hummus to serve
Cut the mushrooms into quarters.
Place a non-stick pan on medium heat and add the butter.
Once the butter has melted, add the mushrooms and thyme.
Fry until the mushrooms are just beginning to brown then add the cream, parmesan and a pinch of black pepper and stir to coat.
Take off the heat.
Toast the Soy and linseed bread and spread each slice with hummus.
Divide the mushrooms between the toasts and serve.
